Gamekeepers Deep South Meat Rub

This rub is an addictive pot of tangy gold dust - with its curious mix of sweet paprika, and sugar tones, that then roll into peppery, chilli heaty notes, with a tap of brown sugar sweetness coming back at you at the end.

Inspiration: This does wonders for any kind of white protein - Chicken Maryland, wings, or even try it on a whole suckling pig, or your next rack of pork. De-lish! You could even lather pieces of fresh pineapple steaks in the rub, and chargrill them to a sweet-savoury perfection.
